Sweet Corn Panna Cotta with Candied Bacon
Sweet Corn Panna Cotta with Candied Bacon is the perfect balance of sweet and savory. Super quick and easy to make with incredible flavors and texture!
  • 1 cup whole milk, plus 3 tablespoons
  • 2-14 ounce cans sweet corn, drained
  • 2 cups whipping cream
  • ¼ cup sugar
  • ¼ teaspoon kosher salt
  • 1 packet of powdered unflavored gelatin (1/4 ounce)
  • 4 slices of bacon
  • 4 tablespoons brown sugar
  • ½ teaspoon ground cayenne pepper
  1. Place 1 cup of milk and the corn in the bowl of a food processor or blender and pulse until all of the kernels are broken up - it will look kind of mealy.
  2. Pour the contents into a medium saucepan and add the cream, sugar, and salt. Simmer on low for 30 minutes, covered, stirring occasionally.
  3. Add 3 tablespoons of milk to a small bowl and sprinkle the powdered gelatin on top. Allow to sit for 15 minutes.
  4. In the meantime, using a fine-meshed sieve, strain the corn mixture into a large bowl with a pour spout. Using a wooden spoon, press the contents against the sieve to extract as much liquid as possible. (At this point you can discard the corn pulp or if you don't want anything to go to waste, save it for a corn fritter or pancake).
  5. Add the softened gelatin to the bowl of strained corn-cream and whisk very well until the gelatin has completely dissolved.
  6. Pour the mixture evenly into 4 ramekins or small glasses and refrigerate for 6 - 8 hours.
  7. To make the candied bacon, preheat the oven to 350 degrees F. Line a pan with aluminum foil (easier clean-up) and place a wire rack on top (if you don't have a wire rack, just place the bacon directly on the foil-lined sheet pan. In a dish, combine the brown sugar and cayenne. Coat both sides of the bacon with the sugar mixture. Place on the wire rack and bake for 15 - 20 minutes.
  8. Roughly chop the bacon and place on top of each panna cotta. Serve and enjoy!
The sweet corn panna cotta can be made ahead of time. Simply bake the bacon before serving and enjoy! This recipe can be easily doubled or tripled.
