Gochujang

Gochujang

Gochujang is a fermented chili paste commonly used in Korean cuisine. It has a sweet, salty, hot flavor which adds incredible depth to dishes. It’s fantastic in marinades, sauces, and glazes – you may recognize its flavor in bulgogi or the sauce in bibimbap. This stuff is seriously amazing! If you’ve never worked with it, give it a try! 

Depending on the brand, it should indicated the heat level somewhere on the packaging. I use ‘medium-hot, level 3’, but use whatever heat level you’re comfortable with. It can be found online or in any Asian grocery with a good Korean representation – it generally comes in a red plastic tub with a flip-top lid.
