Spaghetti Pizza

Got leftover spaghetti?  If you’re like me, you make enough pasta to feed a small army… there are always leftovers in our house.  Last night I made Spaghetti Agli e Olio – a wonderful dish with a ton of garlic, olive oil, red pepper flakes, and parmesan.  One of my favorite ways to reinvent this dish, is to make Spaghetti Pizza.  Simply add eggs and then sauté until golden brown.  What could be easier than that?!

This is not so much a recipe as it is an inspiration – you can use virtually any noodle dish you like and add extra ingredients, such as cheese, bacon, or greens.  If you are using a heavily sauced pasta dish, shake off the excess sauce before adding the egg and sautéing.  Then add the extra sauce at the end to top the spaghetti pizza.

Spaghetti Pizza

Serves: 2 – 4 people
Got leftover spaghetti? Make Spaghetti Pizza! Super quick, easy, and totally delicious!
Ingredients
  • 2 cups cold leftover spaghetti
  • 3 large eggs, beaten
  • Kosher salt
  • freshly ground black pepper
  • 2 tablespoon unsalted butter
  • 1 tablespoon fresh parsley, chopped
Instructions
  1. In a medium size bowl, combine the spaghetti and eggs. Season with salt and pepper.
  2. Over medium heat, warm the butter in a 10-inch sauté pan. Add the spaghetti mixture, spreading the pasta evenly throughout the pan. Cook until golden brown, about 8 minutes.
  3. Carefully invert the pasta onto a plate. Slide the spaghetti back into the sauté pan to cook the other side, about 6 minutes.
  4. Turn out onto a plate and garnish with parsley. Slice, serve, and enjoy!
Serving size: 2
Notes
If you are using freshly cooked pasta, allow the noodles to cool before adding the egg – otherwise the eggs will scramble.

    Oh my gosh, I love eating noodles. I just love it when my mouth is FULL of noodles! This spaghetti is perfect because it bypasses the need to be slowed down with a fork. Just pick it up and stuff it in your face! Yummy! I wouldn’t share it, either. 🙂

      Ha! No worries, Meggan – I ate the entire ‘pizza’ before my husband got home. He didn’t know I even know I made it, until he saw the post! Clearly I don’t share either 😉

    I practically fell off my chair with excitement when I saw this. YOU ROCK. Full stop. a) Aglio e olio is my all time favourite pasta and if my gut wasn’t so big already, I’d happily have it every single night b) This is SO CREATIVE. I want to dive in and have that whole pizza for myself! c) I happen to have leftover pasta in the fridge after a failed attempt at making a pasta pie. So I’m going to try this for lunch!!

      Actually… I did eat the entire pizza. My husband came home and after seeing my post, asked where his slice was. I just can’t help it – I love noodles of all kinds! In fact, I never met a carb I didn’t like 😉 I hope you give the ‘pizza’ a try, I think you’ll really like it!

    These look so cool! Pinning and will try something similar! Once I attempted to make spaghetti pizza in the oven, but did not use eggs in the recipe, turned out pretty good!
