Nuoc Cham, otherwise known as Vietnamese dipping sauce is made with fish sauce, lime juice, sugar, and water. As an addition, sometimes garlic and Thai bird chilies are added to give it that extra oomph. Sweet, sour, and spicy – it’s the perfect compliment to grilled meats or spring rolls, as the acid cuts through some of those richer flavors to create a complex balance to a dish.

I would swim in a bathtub of this if I could. The local Thai restaurant includes it with one of their appetizers and I always ask for as much extra as they’re willing to give me.
