A double boiler is a specialized set of pans used for gentle cooking. Rather than buying another piece of kitchen equipment, simply fill a medium sized sauce pan with an inch of water, and nest a larger heatproof glass bowl over top of the pan. The bowl should never touch the water in the lower pan. A snug fit between the bowl and the pan ensures that no water or steam mixes with the ingredients.
