Ponzu is a citrus based sauce common in Japanese cuisine. The sauce mixture is made with rice vinegar, rice wine, bonito flakes, and seaweed. After the mixture is brewed, the contents are strained and then infused with a Japanese citrus fruit, most commonly yuzu. The result is a sauce that is salty, sweet, with a slight sour/bitter finish. It’s fantastic in marinades; drizzled over fish, veggies, and meats; and it makes a wonderful dipping sauce for sashimi and shabu shabu.
